Vegan Maple Donuts

Do you ever just crave a good old fashioned donut?  what kind question is that... The question should be, Who doesn't crave a good old fashioned donut sometimes?  The baked vegan maple donut are a perfect combination of spice & sweetness. This are also free of most of the common allergens (dairy, eggs, soy, nuts) for you food sensitive folks out there.  The first time I made these was for Taylor's birthday soon after Alice was born, and it was the first time since he was a kid that he was able to eat a donut.  So quickly it has become a favorite around here.

Vegan Maple Donuts

Ingredients

Doughnuts

  • 1/2 cup unsweetened vanilla ripple milk
  • 1/2 teaspoon apple cider vinegar 
  • 1/4 cup of brown sugar
  • 1/4 cup of granulated sugar 
  • 1/2 cup So delicious unsweetened vanilla coconut yogurt
  • 1/4 cup of coconut oil melted
  • 1 teaspoon if vanilla extract
  • 1 1/4 cup of all purpose flour
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt

Maple Glaze

  • 1/4 up of maple syrup
  • 1 teaspoon Earth Balance Soy Free butter
  • 2 cup of powdered sugar

Directions

  1. Preheat the over to 350.
  2. In a small bowl combine Ripple milk and apple cider vinegar and whisk.  Allow to sit and it will start to coagulate.  This sounds gross but the reason for this step is to create a buttermilk consistency and flavor to the donut.
  3. In a larger bowl or mixture bowl sift together dry ingredients: flour, baking powder, baking soda, cinnamon and salt.
  4. Add both sugars, yogurt, oil and vanilla to milk mixture and whisk until evenly combined.
  5. Slowly add wet ingredients to dry ingredients and mix until batter is smooth.
  6. Grease doughnut pan.
  7. Add batter to piping bag or create your own piping bag by using gallon zip lock bag and cutting a corner of the bag to use to pipe the batter into the donut pan. 
  8. Pipe batter into donuts pans about 3/4 of the way filled.
  9. Bake for 12 minutes.
  10. Meanwhile create the frosting by sifting the powdered sugar into the mixture.  Add the butter and slowly add the maple syrup until your desired glaze consistancy.  You can add more sugar or syrup as needed.
  11. Once the doughnuts are slightly cooled pour or spread glaze on your doughnuts.
  12. Eat and share these yummy donuts with people who you love that love donuts!
